Mint Chip Smoothie

This is my all-time favorite smoothie, and it’s what I make on repeat when the weather gets warm. This smoothie tastes like mint chip ice cream, but it is packed with hidden veggies. There isn’t any added sugar, but the banana adds plenty of natural sweetness, and cocoa nibs give it that chocolatey crunch. When you taste it you won’t believe that it’s mostly vegetables!

Ingredients:

(Serves 1 large or 2 small)

  • 1 cup steamed then frozen cauliflower

  • 1 cup steamed then frozen zucchini

  • 1 stalk frozen celery

  • 2 frozen bananas

  • 2 T coconut butter

  • 1 tsp spirulina

  • Large handful of mint (about 15 leaves)

  • 2 T hemp seeds

  • 2 T chia seeds

  • 1 cup oat milk

  • 1 cup water

  • 3 T cocoa nibs

Method:

Blend hemp seeds with oat milk and water. After creating a frothy milk, add the the rest of the ingredients except the cocoa nibs. Blend under combined into a thick shake. Then, add the cocoa nibs and pulse: you want to break them up, but keep some of the crunchy texture to remind you of bitting into chocolate as in mint chip ice cream.
