Homemade Almond Milk
Learning how to make my own nut milk was such a game changer. Instead of fretting when I ran out of non-dairy milk, I just threw some nuts and water into the blender and viola! Since there are no emulsifiers you will see separation. When that happens, just give it a shake and it will turn back into a creamy beverage. With fresh almond milk there are no stabilizers either, so the shelf like is about 3 days.
Ingredients:
1 cup water
4 cups water
(Optional) 1 vanilla bean
Cheesecloth
1 quart-sized jar
Method:
Soak almonds overnight to soften them. Add them to the blender with water (and optional vanilla bean. Blend on high for 3 minutes until completely pulverized.
Strain blended almond milk through a cheese cloth and into a clean jar. Save the almond pulp (leftover almond bits) for baked treats. There are thousands of almond pulp recipes online, so that you don’t have to waste any food.
