Creamy Mushroom Toast
This is a very simple lunchtime recipe adapted from Deliciously Ella’s cookbook, Quick and Easy. We have so much sourdough in our house thanks to Tobi’s baking obsession, so we are always welcoming easy and tasty toppings to pair it with. I love eating this creamy mushroom toast for breakfast or lunch.
Ingredients:
1 clove garlic, minced
2 sprigs thyme
6 oz sliced mushrooms
2 T vegan yogurt (I use @lovvelavva yogurt with it coconut and pili nut)
Pinch salt and pepper
1/2 T avocado oil
Method:
Heat avocado oil in a frying pan. Add garlic and leaves from 2 sprigs of fresh thyme. After 1-2 mintues, add the sliced mushrooms and continue to sauté until they start browning. Add a pinch of salt and pepper, and then finish off with a dollop of vegan yogurt. Pile on top of a thick slice of sourdough bread.
