Figgy Coconut Smoothie

Fresh figs have a short lifespan: they can go from ripe to spoiled in a matter of days. Whenever I have extra figs that look like they are about to turn, I freeze them for smoothies. This is my favorite figgy smoothie, perfect when I’m nostalgic for a taste of summer. It also has a nice texture to it with all of the fig seeds, chia seeds, and coconut shredded bits in it. I top it off with extra chopped hazelnuts and coconuts for a finishing touch.

Ingredients:

  • 5 frozen figs

  • 1/2 cup steamed and frozen cauliflower

  • 1 cup unsweetened dairy-free yogurt

  • 1/2 cup unsweetened almond milk

  • 1 T chia seeds

  • 2 T shredded coconut

  • 1 T tocos (optional)

  • Toppings: coconut flakes, chopped hazelnuts, & raw almond butter

Method:

Add kefir and almond milk to the blender first. Then add the rest of the heavier ingredients. Blend on high for 3 minutes. Add toppings before serving.
