Dairy-Free Mango Lassi Smoothie

I made this when I had a random craving for a mango lassi, but wanted to make it dairy free. The trick to getting it so thick is using frozen mango and sneaking in frozen cauliflower (which you can’t really taste). It’s really creamy and decadent; perfect for a summer day. I like pouring it into a bowl and eating it with a spoon because it reminds me more of a milkshake than a juice.

Ingredients:

  • 1/4 cup dairy free unsweetened Greek style yogurt

  • 1 cup frozen mango

  • 1/2 cup unsweetened coconut milk beverage (or any other dairy free milk)

  • 1 T chia seeds

  • 1/2 cup frozen cauliflower

  • 1 scoop protein powder

Method:

Add the coconut milk beverage and yogurt first. Then add the heavier items like the mango and cauliflower. Add the chia seeds and protein powder. Blend for 3 minutes.
