Mushroom Pizza with Mushroom Sauce

With a rich mushroom sauce and thick slices of portobello mushrooms on top, this is the most umami pizza you will ever eat. I have the recipe for the pizza dough in my green pizza recipe - another favorite of mine! We make our pizza on a pizza steal which is truly the best way to make oven pizza. But if you don’t have one at home, you can use a pan sheet instead. Just make sure to dust the bottom of the tray with cornmeal so that the dough doesn’t stick. You’ll probably also need to bake it for at least 15-20 minutes, so make sure you keep a close eye on it. In either case, you’ll know it’s ready when the cheese on top bubbles and the crust starts to turn a golden brown.

Mushroom Sauce Ingredients

  • 1 lb of mushrooms (a mix of bella mushrooms, shitake, and maitake)

  • 1 large onion

  • 1 T avocado oil

  • 1 cup of curley parsley

  • 1 1/2 tsp sea salt

  • 1/2 tsp black pepper

  • 1/2 cup toasted walnuts

  • 1/2 cup water

Pizza ingredients:

  • 3 large portobello mushrooms, sliced 1/2 inch thick

  • pizza dough

  • mozzarella

Method

To make the mushroom sauce, heat avocado oil in a large pan. Add the sliced onions and sautée under caramelized (golden brown). Add sliced mushrooms, and continue to sautée for another 5 minutes. Add sautéed veggies to the blender. To get the rest of the caramelized flavors in the pan, make a rue by adding water to the pan and use spatula to gather flavors of the pan. Add water and flavorings to the blender, along with the rest of the ingredients. Blend under creamy.

Assemble the pizza using a thinly stretched pizza dough, and spread a thick layer of the mushroom sauce as the base. Top generously with mozzarella and the thick slices of portobello.

Using a heated pizza steal, bake at 500 F for 4-5 minutes, until the crusts and the mozzarella are golden and bubbly.
