PB & Pomegranate Toast
PB&J is an American classic that I grew up eating literally almost every single day when I was a kid - I couldn’t get enough! These days I try to avoid jelly because it’s loaded with sugar and preservatives. As a fun and seasonal alternative, try pomegranate seeds instead. They are naturally sweet on their own and loaded with nutrients like folate, potassium, and vitamin K. They also pop in your mouth so they and a surprising textural component. Also, this recipe couldn’t be any simpler. Just make sure you reserve a few minutes to take out the seeds of your pomegranate and perhaps wear an apron for some splash control - the seeds are very juicy!
Ingredients
1 slice of bread
2 T peanut butter (or nut butter of choice)
2 T pomegranate seeds
Method
Toast your bread and then apply a generous layer of the nut butter on top of the bread. Sprinkle with pomegranate seeds and dig in!
