Mint Chip Smoothie
This smoothie tastes like mint chip ice cream, but it is packed with hidden veggies.
Ingredients:
(Serves 1 large or 2 small)
1 cup steamed then frozen cauliflower
1 cup steamed then frozen zucchini
1 stalk frozen celery
2 frozen bananas
2 T coconut butter
1 tsp spirulina
Large handful of mint (about 15 leaves)
2 T hemp seeds
2 T chia seeds
1 cup oat milk
1 cup water
3 T cocoa nibs
Method
Blend hemp seeds with oat milk and water. After creating a frothy milk, add the the rest of the ingredients except the cocoa nibs. Blend under combined into a thick shake. Then, add the cocoa nibs and pulse: you want to break them up, but keep some of the crunchy texture to remind you of bitting into chocolate as in mint chip ice cream.
