Chocolate Cherry Pistachio Balls

Somewhere between a snack and a dessert, these energy balls are so filling and delicious. I’ll even have a couple for a sweet breakfast if I’m in the hurry. I add the hemp seeds in here for some extra plant-based protein and omega fatty acids. I also use extra dark chocolate (85-90%) so that there is minimal amounts of added sugars.

Ingredients:

  • ½ cup pistachios

  • 5 Medjool dates, pitted

  • ¼ cup dried cherries

  • 2 T hulled hemp seeds

  • 3 T (½ oz.) chopped dark chocolate

  • Pinch of salt

Method:

Blend everything together in a food processor until it’s evenly mixed into a ball. You will need to stop to scrap down the sides a few times. It can have some texture, so you don’t need to completely pulverize it.
